Escaping for an Afternoon of Sand and Saltwater Taffy!

Swinging by to pick up Poh, we decided on a mid-day escape to the beach. Our leisurely drive to the stunning Oregon coast promised blue skies would eventually break through and by mid-day we were basking in the sun.  We landed in Cannon Beach at our favorite eatery JP's. Known for the best Salmon Chowder anywhere. JP's will be closing their doors after 17 years. Co-owner Diana told us her and her hubby are heading to Greece for a month in October and will be celebrating on Sept. 24 by holding a closing party and raffle for their well guarded top secret recipes for their clam, salmon, and seafood chowders. Raffle tickets are $20 each. Poh and I shared an amazing Chicken Salad Tarragon Sandwich while catching up on all the news. It became obvious we needed the recipe when we were both moaning.  Luckly we did not attract attention as all the other patrons were moaning over their plates as well. We coaxed the recipe from Diana who gladly shared... keep in mind, her version is made with their homemade bread... a must ingredient!

Diana's Chicken Salad Tarragon Sandwich

Roast chicken breasts with garlic herb seasoning, cool and then cube
Add Best Foods Mayo
1 dried sprig of Tarragon
Garlic and herb seasoning to taste
Add cashews right before serving so they don't get soggy

Spread on homemade white bread and enjoy!

Afterward we decided a quick run to Bruce's Candy Store was required to buy saltwater taffy for making the kids college care packages. Bruce's never disappoints...






Loaded up with all the goodies we headed to Ecola State Park. One of my favorite picnic and hiking spots. As we walked out to the bluffs we managed to pick up a stray companion.  This beautiful little guy followed us on our journey.





 We closed out our excursion with a drive through the Ecola Rainforest down to Indian Beach to see the surfers. Tide was up so we skipped the hike to the tide pools.

An Empty Nest and No Plans! Woowhoo!


With a promise of sunny skies and warm temperatures, my husband and I headed out on one of our newly minted “empty nest adventures”.  The idea here is that no advance planning takes place, as opposed to our twenty plus child rearing years, when EVERYTHING had to be planned out in advance.  Ah….what a luxury….pure spontaneity! 

After breakfast, my husband pulled out his beloved convertible, I grabbed a hat, sunglasses, and sunscreen and off we went.  Where were we headed?  The possibilities were endless!  We knew that we wanted a day trip…no reservation hassle, or cost of a hotel, just a day filled with fun and adventure.  We zipped through Portland and arrived at the I-5 corridor.  North or South???  Wow, what fun!  We chose North since the weather was great and going toward Seattle usually means cooler temperatures, making it not always the best option in often cool temperatures.  We conclude that we should seize the chance to enjoy sunny, warm temperatures while they were offered.  North, we headed!  How far North?  Seattle, Mt. Rainier, Gig Harbor?  Our minds were buzzing.  No planning….just go! 

We popped in Katy Perry’s CD and headed North, big smiles on our faces, our hair flying everywhere!  Along the route, about an hour and a half north of Portland, we saw a sign for Mt. Saint Helens.  That was it!  We had been your typical Mt. Saint Helen’s tourists a few times since moving to the Northwest, but this time would be different…no kids…no timeline…no educational moment.  A whole new perspective to see something familiar, would it be as fun?

In a word – YES!  A lot of fun!  It’s a beautiful route, full of mountain views, clear lakes, and waterfalls, rushing streams and one amazing vista after another.  Seeing it from a convertible for the first time was eye opening.  We actually saw an eagle gliding over our heads!  That’s one of our favorite Northwest sights.  It never stops being awe inspiring to see our national bird in its natural setting.
We grabbed some sandwiches at a small sandwich shop along the route and vowed not to eat them until the right setting presented itself.  Twenty minutes later, we saw a sign for a state park.  That was our lunch destination.  After satisfying our hungry stomachs in a fun forested setting, we headed off again for the mountain.  Along our route, we saw a sign for Coldwater Lake, a scenic picnic spot with restrooms and trails to enjoy.  A small hike sounded fun, so we turned in.  The lake wasn’t very deep, but was amazingly clear.  Dragonflies were dancing off the water everywhere.  In the background was Mt. Saint Helens.  Why did I leave my camera at home?  I did shoot off a few pictures with my phone at least.  After walking the easy loop beside the lake, we jumped back in the car headed towards the Johnson Visitor Center.  Upon arriving, we took in the beauty that the high elevation unveiled, and headed to the Visitor Center.  Then it struck us, we didn’t need to make this a learning moment.  We didn’t have to learn about the process of regrowth after a major eruption; we were empty nesters!  No learning moments required!  We giggled, turned around and didn’t even enter the visitor’s center!  That was not our plan for today….maybe next time…we’ll see.  No plans, remember?

Holiday Fun Ideas for Portland and Beyond!



The beginning of December and I am ready to celebrate every holiday this month!  I think it is time to stop; breathe; appreciate; and be grateful for my circle of amazing friends and family.  As I finish school this coming week and prepare for out of town guests, I am already looking forward to my social calendar and what fun things are going on around Portland and beyond...

My top 10 Portland Christmas list is:

  1. Make our traditional hand blown glass ornament at Elements Glass on NW Vaughn $40 each and an hour of creative learning fun! (Call now to get a reservation: 503.228.0575) Followed by a trip to the food carts downtown.
  2. Holiday Tea at the Heathman Hotel with friends...stunning!  Followed by a quiet evening snuggling in front of the fireplace to watch the trees twinkle lights.
  3. Spaghetti Factory on the Willamette while watching the Christmas ships go by.
  4. Lunch at the Hands on Cafe at the Oregon College of Arts and then up to Pittock Mansion for a tour through the Christmas display.  If that is not enough, tour Peacock lane and drive through your neighborhood for light viewing.
  5. Serving meals at the Portland soup kitchen and then off to the Zoo Lights, followed by dessert at Papa Hayden.
  6. Spend a day delivering gift baskets, checking in on elder neighbors to see if they are ready for winter, then pop into LIMO restaurant before the Michael Allen Harrison Concert at the Old Church.
  7. Taking friends and family to the Grotto for the Christmas lights and walk the new labyrinth.
  8. Parties with friends, simple, but lots of them!Cookie Exchange, wine tasting, carriage rides downtown, dinners in with Christmas or Hanukkah music, a movie night of old holiday flicks...White Christmas anyone?  Make sure you collect warm sweatshirts, gloves and hats from your guests for the P:ear kids down in the Pearl.
  9. Gather family and friends to honor the reason for the season at Midnight Mass.  Come home to hot chocolate before sharing the dawn of Christmas day.Then over-the-hill-and-through-the-woods to Grama's house! Don't forget to call your loved ones who are far away (family, military, friends) or send a facebook greeting!
  10. A huge potluck on the 26th with family and friends to celebrate being together and the anticipation of the new year!
