Make and Take ~ A Grand Stand! May 2011

Cupcake Stand and Card Making Video

Poh hosted a wonderful morning of crafting cupcake stands and matching card and envelope sets! The cupcake stands were based on a model seen at the local paper store. We experimented with the pedestal shape, table top shape, and tablecloth or skirt additions... a bit like playing paper dolls!

Our finished projects together!

Once we completed the darling cupcake holders we moved onto designing matching card and envelope sets.  Cards are a favorite session for the Make and Take Gals. We stock up our collections and each time make a fun and unique pattern. Poh bumped up the elegance factor with a lined envelope, which was so fun to create as we fussy cut paper to showcase just the right design!

We each created 25 unique cards to take home! Time for lunch!

Poh created a beautiful lunch of turkey burgers, three bean salad, and of course, cupcakes! Not just any cupcakes, but rosewater infused pound cake cupcakes with vanilla rosewater frosting. At each place setting was a small spice jar filled with dried bay leafs from her garden and we each took home an heirloom tomato start... wonderful!

A lesson on Mint, June 8, 2009

Mint!

Mint leaves. From left to right peppermint, Eau de Cologne mint (M. citrata), Japanese mint (M. arvensis var. piperascens, also known as var. japonica), horsemint or silver mint (M. longifolia), Moroccan green mint (M. spicata), pineapple mint (M. suaveolens) and Carinthian mint (M. carinthiaca = M. arvensis x M. suaveolens)

Photo and description from Gernot Katzer's Spice Pages.

I love when I go to my neighbor's house for dinner or a visit, she always offers me mint herbal tea over ice. Made fresh from her garden, I have become fascinated with how good it makes me feel. So, after some poking around I found it has so many wonderful benefits for the body and soul. It is known as the symbol of hospitality in Greek mythology, but that is only the beginning of its many uses.

Mint makes a revitalizing foot scrub or rub. Combine 1 cup of Epsom salt, 1/3 cup olive oil and 6 drops of Peppermint essential oil. Scrub your feet, or better yet, ask someone else to scrub your feet and do the same for them. Rinse and enjoy the tingle!

Lake Austin Spa has a wonderful recipe for taking away dandruff. Add one sprig of mint and of rosemary in 8oz of cider vinegar, let sit for a week, and then use after shampooing.

As a feel good all over, put mint in hot water to steep, then serve hot or over ice. It is fun to play with herb combinations, for a fun summer blend try basil or pineapple juice! Mint soothes the tummy and muscles.

Mint is also know for curbing hunger. Smell or sip tea and it will satisfy you enough to avoid those snack habits. Peppermints are low cal usually and provide the same benefits...but only one please!

At the end of the day, to get the full relaxing benefits of Mint, head over to NE Portland's Mint 829 Restaurant and enjoy a Pan American Bistro with influences from the Pacific North West, the Mediterranean and Latin America. "Located in the historic Frederick Torgler Building, Mint's sleek, yet cushy interior allows the vibrant drinks and cuisine to take center stage, inviting guests to relax and enjoy."

Make and Take, March 17, 2009

March Make and Take

March Make and Take was at my house this time. I made stuffed chicken breasts with sweet potato fries and shamrock pasta salad. For dessert we enjoyed strawberry cake and some of our Peanut Butter Cup cookies.

Our crafting started with making the Irish Coffee Ball recipe and then we packaged the balls with several packaging options. The leprechaun cookie cutter stuffed with balls was Pam's idea and darling! Our second cookie was from the Cast Sugar blog: (http://castsugar.blogspot.com/search/label/Cookies%2FBars) and we are here to tell you that they are delicious cookies! The mini-PB Cups are a delightful surprise! Once this dough was mixed up we rolled the dough into logs; enough for 2 logs each; wrapped them in wax paper; then cut 6"x12" sections of fun fabrics to wrap the dough in for future gifts. For now they will go into the freezer ready for gift giving!

Our little Gnome was surrounded with shamrocks and kept our meeting on track as we all enjoyed a hot cup of tea and Irish Soda Bread...yummers!

Irish Coffee Balls

Here is a cookie recipe that will have any respectable leprechaun kicking up his little feet just from the smell of them! Consume at your own risk and prepare to share with others!

3 1/2 cups vanilla wafer crumbs
1 cup finely chopped pecans
1 1/2 cups powdered sugar, divided
3 tablespoons instant coffee granules
1/3 cup Irish Whiskey
1/2 cup light corn syrup

In a large bowl, mix together crumbs, pecans and 1 cup sugar until combined. In a separate cup, dissolve the coffee granules in the Irish Whiskey and add to the crumb mixture; also add the corn syrup and mix until well blended. Shape into 1 inch balls and roll in the remaining powder sugar to coat. Store in an airtight container.

Yields a wee bit over 4 dozen, and the flavors intensify over a couple days of storage!
